Lazy Daisy Cake

This is a cake my family grew up eating. I don’t make it very often because it is so hard not to eat a whole row at a time!

Pour four eggs into a large mixing bowl.

My assistant adds 2 cups of sugar

And 2 teaspoons of vanilla

Now this needs to beat until it thickens, which takes 4-5 minutes.

In a seperate bowl, pour in 2 cups of flour

1/2 teaspoon salt

And 2 teaspoons of baking powder

Combine these ingredients.

And add them to the egg mixture. Beat just until flour is moistened.

Put 1 cup of milk and 1/4 cup butter into a saucepan and heat to boiling.

Add to your batter and beat until well combined.

Pour into a greased 9 x 13 pan. I like to use the spray stuff, especially for the stoneware pans.

Bake at 350 for 35-40 minutes.

Now for the ooey gooey stuff:

In a bowl, combine 1 1/2 cups brown sugar

1/2 cup melted butter

1/2 cup half & half

2 cups flaked coconut

Mix this all together

And spread it on your still warm cake. Make sure it has cooled down enough or else it will all run to the sides.

This is the part where you don’t want to turn your back. Place under the oven broiler and broil until lightly browned. This only takes a few minutes but if you forget to watch it, the smoke will start rolling out. It burns really easy!

A moist cake with chewy crunchy frosting. Now come and help us eat it up!

LAZY DAISY CAKE

4 eggs

2 cups sugar

2 tsp vanilla

2 cups flour

2 tsp baking powder

1/2 tsp salt

1 cup milk

1/4 cup butter

Beat eggs, sugar and vanilla until thick, about 4-5 minutes. Combine flour, baking powder and salt and add to egg mixture. Beat just until combined.

In a saucepan, heat milk and butter to boiling. Add to batter and beat until combined. Pour into a greased 9 x 13 pan and bake at 350 for 35-40 minutes.

FROSTING

1 1/2 cups brown sugar

1/2 cup melted butter

1/2 cup half & half

2 cups flaked coconut

Combine and spread over warm cake. Broil until lightly browned, about 3-4 minutes.
