Pancakes

This is the pancake recipe I have used for 30 years. You can make some variations from it but this is the basic one.

Here's the ingredients:

1 cup buttermilk
1 beaten egg
1 T sugar
1 T baking powder
1 T olive oil
dash of salt
1 cup flour

The coffee is just for drinking, don't put it in the pancakes!

Mix together the buttermilk and egg. You can use plain milk if you'd like or if you don't have buttermilk, add a tablespoon of white vinegar to the plain milk.

Add the sugar, baking powder, oil & salt. Stir until blended.

Stir in the flour.

Preheat the griddle. Note girls that I said preheat, meaning don't dump the batter on a cold griddle. Spread a little oil on the griddle, more if you want it crunchy. Pour a big spoonful of batter in the hot pan.

Flip over.
